The long cook of this cake really allows the flavour of the wood to sink into the cake adding an extra layer of flavour.
Step 1
Line a 2lb loaf tin with baking parchment.
Step 2
Mix the flour, bicarbonate of soda, salt, cinnamon and cloves together in a bowl.
Step 3
In a separate bowl, beat together the butter and sugar until paler and fluffy. (Use an electric hand whisk or a wooden spoon.)
Step 4
Beat in the eggs followed by the banana, sour cream and vanilla extract.
Step 5
Add in the flour mixture and mix to combine, being careful not to over mix but making sure there are no pockets of dry flour left.
Step 6
Spoon the mix into the lined loaf tin and place in the Gozney and cook for 50-70 minutes, with the door on.
Step 7
Check the loaf is cooked by making sure a skewer comes out of the centre of the cake clean. Place some foil over the top if it’s browning too quickly.
Step 8
Leave to cool in the tin for 15 mins before removing and leaving to cool completely before serving.
