Step 1
To prepare the fish, lightly score the skin on both sides of each fish if using whole fish. Season with salt and pepper, then rub each fish generously with crispy chilli oil.
Step 2
To fill the fish, place 50g / 1.8 oz of butter and a little lemon zest inside each fish cavity. If using fillets, sandwich the butter and zest between two pieces.
Step 3
To wrap in kelp, lay out damp kelp strips and wrap each fish tightly to form a sealed parcel. The kelp will trap steam and flavour, while also crisping beautifully as it cooks.
Step 4
To cook, preheat the Gozney to 350°C / 660°F. Place the kelp-wrapped fish directly on the hot stone or cast iron surface inside the oven.
Step 5
To roast, cook the fish for 8–12 minutes, turning once halfway if needed, until the kelp is charred and crackling and the fish is cooked through.
Step 6
To serve, carefully unwrap the fish and drizzle with olive oil or an extra knob of butter. Spoon over more crispy chilli oil, scatter with lemon zest and any crunchy kelp shards. Serve hot with lemon wedges, crusty bread and a cold beer if you fancy.
